Thai cooking: grilled fish recipe

This week, we decided to share te recipe of the delicious Thai grilled fish (pla pao in Thai). A dish you can enjoy in most thai cities located near the sea.

Ingredients:

For the fish

  • 1 whole fish
  • 1/4 kilo of salt (big grain if possible)
  • 1 tablespoon of flour
  • About 1/2 tablespoon of water
  • 2 stalks lemongrass
  • small handful of kaffir lime leaves

For the sauce seafood

  • 6 tablespoons fresh lime juice
  • 3 tablespoons water
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • ½ teaspoon of salt
  • 15 cloves of garlic
  • 20 Thai bird chilies

Preparation of the grilled fish

Remove the guts from the gills of the fish, without slicing the fish open on the belly, and two, leave the scales on the fish.
Rinse your fish with water and dry it with a paper towel. Beat and crush lemongrass and prepare a small handful of kaffir lime leaves.
Fold the lemongrass in half and stuff the fish with it and about 10 kaffir lime leaves.
In a large mixing bowl, mix salt and flour and one tablespoon of water.
Put the fish into the mixing bowl and start plastering it with the salt mixture.
For grilling the fish, it is best to use charcoal or a BBQ but the heat should be low. It take around 1 hour to grill.

Preparation of the seafood sauce
Peel garlic and add about 20 Thai bird chilies. Pound ½ teaspoon of salt, the garlic, and chilies using a mortar.
In a bowl, mix the pounded garlic and chilies, 6 tablespoons of squeezed lime juice, 3 tablespoons of water, 3 tablespoons of fish sauce, and 1 tablespoon of sugar.
